I’m not a wordy person; I rarely write reviews. Drs. Weinstein and Heying are thinking deeply and discussing issues that matter most to society, culture and science. They’re dialoguing with, for and about truth. For it’s truth that matters most. If I was allowed access to only one Podcast, it would be DarkHorse.
Quite by accident I found your podcast. It is so refreshing, as a conservative, to find rational people who might not always agree with me but I love how you present your topics. I like listening to different ideas and opinions when presenting in calm respectful ways, which seems to be SO rare these days. I appreciate that you are not yelling, you don’t use salacious adjectives and you state your opinions with rationality. Dang, that’s how the news used to be in my youth. I’m actually relaxed and informed after just two of your podcasts. Thank you for expanding my brain. I hope to enjoy more of your insights in the future as I peruse your past episodes.

Love your show! Something to consider about eating European wheat here in US is that the mill they use is likely also milling regular US wheat. Another factor in your research is milling: does Europe use primarily stone ground? If so it keeps the bran (oils, etc) more intact. We don’t typically use stone milling here.
