Ingredients:
6-8 sausages (pork, beef, or your choice)
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, peeled and sliced
2 bell peppers, chopped
1 can (14.5 oz) diced tomatoes
1 cup chicken or vegetable broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 cup frozen peas
Salt and pepper to taste
2 tablespoons flour (optional, for thickening)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the Oven: Set your oven to 375°F (190°C).
Cook the Sausages: In a large ovenproof skillet or casserole dish, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides. Remove from the skillet and set aside.
Sauté Vegetables: In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
Add Carrots and Peppers: Stir in the sliced carrots and chopped bell peppers. Cook for a few minutes until they start to soften.
Combine Ingredients: Return the sausages to the skillet. Add the diced tomatoes (with their juice), chicken or vegetable broth, thyme, rosemary, paprika, salt, and pepper. Stir well to combine.
Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
Add Peas: Stir in the frozen peas.
Thicken (Optional): If you prefer a thicker sauce, you can sprinkle the flour over the mixture and stir well. Let it cook for a few more minutes to thicken.
Bake: Transfer the skillet or casserole dish to the preheated oven and bake for 20-25 minutes, or until the sausages are cooked through and the vegetables are tender.
Garnish and Serve: Sprinkle with fresh parsley before serving.
Enjoy your hearty and comforting sausage casserole!

Oh, I’m winning my league, but not ahead of Ben - yet.
